As a Memorial Day treat this year, my brilliant hubby suggested making ice cream sandwiches out of homemade chocolate chip cookies. Of course, before we could make the sandwiches, we had to bake the cookies. Hannah quickly volunteered.
The recipe has a time-honored history in our home. We inherited the recipe from our dear friends, Christine and Barb. who baked them for my brother and me when we were little. I baked them for my girls when they were little, and now they bake them for the family!
Ingredients
- 1 c. shortening
- 2 eggs
- 2 c. chocolate chips
- 1 c. brown sugar
- 1 tsp. vanilla
- 2 c. flour
- 1 tsp baking soda
- 1 ts. salt
Instructions
- Preheat oven to 375 degrees.
- Cream together shortening, brown sugar, and vanilla.
- Add eggs and beat well.
- Gradually fold in flour, baking soda and salt.
- Bake 8-10 minutes. Place on wire rack to cool.
Once the cookies have cooled, scoop the ice cream of your choice between two cookies. Enjoy!
